  1. 2 tablespoons olive oil

  2. 1 teaspoon curry powder

  3. 1/4 cup finely chopped red onion, insed and drained under running water

  4. 1 cup diced fresh mango

  5. 1 can (15 oz) black beans, drained and rinsed

  6. 1/2 cup chopped red bell pepper

  7. 1 tablespoon finely chopped jalapeño pepper

  8. 1/4 cup chopped fresh cilantro leaves

  9. 3 tablespoons fresh lime juice

  10. 1/2 teaspoon salt


  1. In medium bowl, mix all ingredients except crackers.

  2. Serve with crackers.
